Embark on a 2-hour immersive journey into the world of authentic Sicilian cannoli. This class covers the entire process from start to finish: creating fresh ricotta cheese, mixing the signature crispy shell dough, deep-frying the "little tubes," and assembling your own personalized Italian pastry delights . You'll learn the history of this iconic dessert, and explore traditional versus modern variations. Each student will leave with four handcrafted cannoli shells filled with sweetened ricotta, ready to enjoy or box up.
What You Will Learn
- Fresh Ricotta: Witness a demonstration on how to make this fresh, mild, soft cheese, including ideal temperatures and ingredients.
- Crispy Shells: Discover the secret to the signature crispness and texture of the shell dough.
- Frying Technique: Learn professional tips for keeping oil at the correct temperature and ensuring even cooking for the perfect golden shell.
- Creamy Filling: Master the technique of getting an extra creamy and fluffy ricotta filling, sweetened to perfection.
- Assembly & Garnish: Learn the proper way to fill the shells and customize them with a selection of different toppings.
Class Schedule Highlights
- Introduction (15 mins): Welcome, instructor introductions, snacks and beverages.
- Ricotta Demonstration (30 mins): A full demonstration of making homemade ricotta.
- Shell Dough Demo & Break (20 mins): Instructor demonstration of mixing and kneading the shell dough.
- Break (10 mins): Leg stretch and beverages refills.
- Roll, Cut, & Fry Shells (30 mins): Students get hands-on experience rolling, cutting, and frying shells, learning the best techniques for form removal.
- Assembly & Tasting (10 mins): Final demonstration of stuffing, powdered sugar dusting, and garnishing, followed by student assembly, tasting, and boxing their creations (p. 5).

Join us at the Layered Studio for a for a children’s cake decorating class! In this class we will decorate a 6” cake in a Thanksgiving turkey design. All materials and tools needed to create this cake will be provided by us. Simply show up ready to have fun, be creative, and eat cake!
In this class, we will:
Frost a cake in brown icing
Use fondant to make the turkey eyes, beak, and wattle
Make turkey feathers using candy melts
Have a whole lotta fun!

This 2-hour, hands-on class is designed for kids to dive into the fun world of cake decoration! No experience is necessary to join this exciting journey to create a festive "Pot of Gold" themed cake.
What Your Child Will Learn
- Covering a Cake: Learn how to apply frosting to a cake using an offset spatula and other cake decorating tools
- Piping Skills: Learn to fill a piping bag and use specialty piping tips
- Decorating & Detailing: Kids will learn how to apply pre-cut fondant names (see ‘Special Notes & Recommendation’ section below), arrange assorted gold chocolate coins to create their edible treasure, and add shamrocks and grass using simple techniques
Class Schedule Highlights
- Introduction & Prep (10 mins): Welcome and set up.
- Covering the Cake (40 mins): Kids get hands-on experience icing their 6-inch cake with black frosting.
- Break & Refreshments (15 mins): A chance to clean up tools, have a snack, and grab supplies for the final touches.
- Adding Details (30 mins): The exciting part—piping handles and rims, adding names, creating grass effects, and placing coins.
- Photos, Box Up, & Optional Cake Tool Purchasing (15 mins): Plenty of time to take photos, safely box the creations to take home, and browse our selection of cake decorating tools.
