Fresh Fruit & Cream Heart Pavlova Class 

Overview
​This Pavlova Class is a comprehensive, culinary experience designed for 18 students. The class balances technical demonstrations with interactive assembly, guiding participants through the creation of a light, airy pavlova from the initial meringue whip to the final decorated masterpiece.

What You Will Learn
​- The Perfect Meringue: Master the art of whipping egg whites, understanding the importance of grease-free tools, temperature, and the role of cornstarch and vinegar.
- ​Piping Techniques: Learn how to pipe elegant 8-inch hearts using a star tip.
​- Freezer Jam: Learn to make a vibrant freezer jam, focusing on sugar dissolution and the proper use of pectin.
​- Chantilly Cream: Discover the secrets to a stable, high-volume whipped cream, including the benefits of using chilled equipment.
- Assembly: Learn how to assemble all of our prepared ingredients to create a gorgeous and tasty fresh fruit pavlova.

Class Schedule
​- Introduction & Snacks (10 mins): Welcome, instructor introductions, snacks and beverages.
​- Pavlova Shell (40 mins): Step-by-step demonstration of mixing and piping the meringue shells.
​- Break (10 mins): Leg stretch, and beverage refills.
​- Fillings & Toppings (40 mins): Demonstrations on making freezer jam and Chantilly cream.
​- Assembly & Wrap Up (20 mins): Students fill their pavlova shells with jam and cream, decorating them with fresh fruit before boxing them for transport.

BEAN TO BAR CHOCOLATE CLASS WITH SPECIAL GUEST MOMMA MACK

Learn how to make chocolate starting with the cacao bean with special guest Trish Mack (Our
team member Jessie's Mom, so call her Momma Mack!)

Learn the basics of chocolate making from the bean to the delicious chocolate bar. Trish will teach us how to roast, refine, and temper chocolate. You will experience the smells and tastes at every step of the process as well as tasting cacao nibs and chocolate from all around the world's cacao belt.
Trish just attended the NW Chocolate Festival where artisan chocolate makers, representing 30 countries, gathered to showcase their unique chocolates and share their love of the craft, and she is bringing that experience into the class. Best part, you will be part of creating an inclusion bar and go home with a chocolate bar made by Trish.

Overview
​This Cream Puff Class offers an immersive, 2-hour culinary journey into the world of French choux pastry. Students will learn the technical foundations of pâte à choux through live demonstrations and interactive filling stations, guiding them from the creation of the cooked "panade" to the assembly of beautifully decorated cream puffs.

What You Will Learn
​- The Art of Choux: Understand the science of pâte à choux, including starch gelatinization, moisture control, and how to achieve the perfect "V" consistency with eggs for a smooth, shiny batter.
​- Savory Variations: Discover how to transform basic dough into savory Gougères by incorporating Gruyère cheese, nutmeg, and black pepper.
​- Master Pastry Cream (Crème Pâtissière):, including the critical egg-tempering process to prevent scrambling and how to activate starches for the perfect firm set.
​- Filling & Decorating: Learn the difference between traditional pastry cream and Diplomat Cream (a lightened custard/whipped cream blend), alongside professional piping and finishing techniques.

Class Schedule
​- Introduction (15 mins): Welcome, instructor introductions, snacks and beverages.
​- The Batter & Piping (45 mins): A detailed demonstration of the choux batter followed by student piping practice, focusing on spacing and proper baking temperatures to ensure high-volume, hollow shells.
​- Break (10 mins): Leg stretch and beverages refills.
​- Pastry Cream Demo (25 mins): A step-by-step look at creating rich, smooth fillings, including tips on preventing "skin" formation and re-whisking for consistency.
​- Filling & Decorating (25 mins): Hands-on assembly at student stations where participants fill cream puffs two different ways: sliced strawberries, whipped cream & powdered sugar as well as diplomat cream with a chocolate ganache dip.

sourdough bread class

Overview
​This Sourdough Class is an immersive, 3-hour journey into the world of wild yeast and artisan bread. Students will learn the technical foundations of maintaining a starter, the initial mixing, the process of "stretch and folds", shaping the loaves, and finally baking to perfection. This class will walk you through everything you need to know, and send you home with a recipe, the tools you'll need, as well as your own starter so you can immediately begin your Sourdough journey in your own home.

What You Will Learn
​- The Living Starter: Master the lifecycle of a sourdough starter, including terminology, how to identify a "ripe" starter, and the essential feeding schedule.
- ​Dough Development: Learn the "stretch and fold" technique to build strength and structure in your dough without traditional kneading.
​- Flour Science: Discover the roles of different grains, such as how whole wheat adds flavor while bread flour provides a stronger rise.
​- Shaping & Scoring: Practice professional pre-shaping and final shaping techniques to ensure your loaf has the proper tension for a beautiful oven spring.
- ​The Perfect Bake: Master the home-baking process, from using a Dutch Oven to create steam to scoring designs with a bread lame for controlled expansion.

Class Schedule
​- Mixing & Starter Care (35 mins): Welcome, hands-on feeding of the starter, followed by a demonstration on mixing the base dough.
​- Developing the Dough (135 mins): A series of three "stretch and folds" interspersed with lessons on starter maintenance, discard uses, and the fermentation timeline.
​- Break & Tasting: Leg stretch and a guided tasting of pre-baked sourdough loaves with butter, balsamic vinegar, and Italian olive oil.
​- Pre-shape & Final Shape (20 mins): Students learn to handle their risen dough, performing the final shaping before placing their loaves into bannetons.
​- Score & Bake Demo (10 mins): A technical demonstration on how to flip, score, and bake the dough at home using a 500°F preheated oven.

Join us at the Layered Studio for a for a fun and laid-back cooking experience where students will learn how to make pumpkin ravioli with the Layered ladies. 

During this class you will learn how to:
Make pasta dough using pumpkin puree with the food processor method
Make a pumpkin ricotta filling with a hint of Calabrian Chili Pepper
Roll, fill, seal, and cut the ravioli

Throughout this 2.5-hour session, students will move from learning how to prepare a meat sauce to the assembly of a rich, multi-layered pasta bake featuring traditional ingredients like salami, provolone, and hard-boiled eggs.

What You Will Learn
​- The Meat Sauce: Learn to build a robust red sauce starting with a beef base, Italian canned tomatoes, and fresh basil.
​- Pasta Precision: Master the technique of cooking rigatoni ‘al dente’ to ensure it maintains the perfect texture after its second cook in the oven.
​- Deluxe Layering: Discover the traditional style of assembly, incorporating creamy whole-milk ricotta, chopped hard-boiled eggs, salami, and a trio of cheeses.
